Spinach and carrot soup

Winter’s nearly gone in this part of the world and here I am posting the first winter warmer soup. Surprisingly we’ve had very little soup this winter at home. I guess it just wasn’t on the radar. This is ‘farevite’ of my younger one as well as Sid, so we do make it as often as we can. It has a wholesome and simple taste that you can never tire of.

Serves: 4


  • A big bunch of spinach, wshed and chopped roughly
  • 3 medium carrots, grated
  • Salt and pepper to taste
  • 2 tablespoons of cream or milk

Making it (couldn’t be simpler!):

  • Pressure cook or slow cook the spinach and carrots until they are completely soft. Drain the water and keep aside.
  • Puree the spinach and carrot with a blender, in a mixer, whatever’s on your kitchen counter.
  • Add a little salt to taste.
  • Mix in the cream / milk. This will not only make the soup rich and creamy, it takes the edge of the plain spinach that can be a little hard on the palate.
  • Shake freshly ground pepper just before serving, and serve this one HOT!
