Veggie hot pot

It’s been a while folk! And I only have the craziness of our daily schedules to blame from this uncharacteristic absence from STB. I think after the hols I’ve just got too embroiled in the daily grind of getting stuff ready for the older one’s school and the younger one’s all-day needs that putting fingers to the keypad has taken second, nay, third place. But am back and I hope to keep ’em coming more often!

This 12 inch dish hotpot vanished between 3 of us the last time I made it :). Super simple to make, it just needs some time in the oven. The USP of this dish is that you can throw in just about any veggies you have on hand, except perhaps the ones that get ultra-mashed like broccoli if cooked for too long and sticky ones like okra. Potatoes, carrots, zucchini, eggplant, peppers, onions, radish, beans, squashes, and gourds – all are welcome.

For this dish I used:

  • 2 medium carrots, diced 1 inch
  • 1 cup of mixed beans (or soak chickpeas, rajma, white beans overnight and cook until done)
  • 1 zucchini, halved and sliced
  • 2 medium onions, diced
  • 1 green pepper, 1 red pepper, diced
  • 1/2 cup corn
  • 2 cups tomatoes, skinned and chopped roughly
  • 2 cubes of cheddar cheese, cut into small pieces
  • Salt to taste
  • 1 or 2 teaspoons paprika powder
  • Crushed pepper
  • 3 medium potatoes, skinned and sliced thin
  • Oil to saute – about 1 tablespoon

To make it:

  • Heat the oil in a large pan and saute the onions for two minutes. Add the carrots next and saute for a few minutes.
  • Then all the other vegetables, except beans, and saute on a low flame for about 10 minutes until the vegetables are 3/4 cooked.
  • Add the chopped tomatoes, beans and salt and cook the mixture for a few minutes to let the mixture combine.
  • Heat an oven to 200 degrees C.
  • Take the pan off the heat and empty the mixture into a 12 inch baking dish. Sprinkle the cheese cubes on top. Sprinkle crushed pepper.

  • Layer the potato slices on top. Brush with melted butter, vegetable fat or olive oil. I used a cooking spray. Sprinkle some more salt and pepper on the slices.

  • Bake for about 30 minutes until the potatoes are golden brown. The juices will come through and bubble up at times. This is OK. Once baked, the dish is quite non-runny.

  • Serve steaming hot with garlic bread or any bread you like!
