Mushroom and red chilli stir fry

This is one of those dishes that happen when you’re unhappy with whatever you’ve already decided for the lunch menu and have to try your hand at some serendipitous cooking. In spite of having a red and green peppers curry all ready I had to chop up those fresh mushrooms and some luscious fresh red chillies…

mushroom chilliThis dish is ready in 5 minutes, barring the chopping.

Just saute the mushrooms in a a little olive oil (or regular oil). Add the chopped chillies and saute for a couple of more minutes. Add finely chopped spring onions, a dash of light soy sauce or mushroom soy sauce, a pinch of salt and some crushed pepper. Finish off sauteing and take off fire. Sprinkle some more spring onions and red chilli on top.

This can top toast, chapatis or make a perfect side with noodles or fried rice.

    This one is right up my street. The mushrooms, the peppers the heat from red chilli! Do you think adding roasted peanuts would make it work as a little something to nibble on with beer.

    Ah, I sense a bit of Thai when u add peanuts. I think they’ll be just great! I made this a little liquidy, with noodles or rice. But if you leave out the liquid it’s a perfect nibble!
