Yellow tomatoes, roast peppers and mint salad

I’m quite the rabid soul when I come across veggies in the market one doesn’t see usually. My eye falls on it and I HAVE to get there before someone else can reach that last packet and remove it from my grasp permanently. Furtive glances to spot the competition, and a beeline for the stall – and phew. That’s how I laid my hands on yellow tomatoes a few days back. If you don’t understand this, it’s OK. You can get your veggies any way you like to and still make this same gorgeous salad.

I made two salads with the haul. I had to use whatever ingredients were at hand ‘coz I hadn’t shopped for much else.

The first was chopped tomatoes, caramelised onions, mint leaves, feta cheese, sea salt and crushed pepper. The caramelised onions were a portion I stole from a batch I had sauteing for a veggie French onion soup. No pics of that one though. Here’s how to assemble the second one. You can do this with red tomatoes too – pick firm ones which will not get squishy when cut.

  • 4 medium yellow tomatoes
  • 1 large red pepper, cored and deseeded. Keep the pepper whole to roast
  • A few mint leaves, washed and chopped roughly
  • A little sea salt
  • Crushed pepper
  • A few dollops of cream cheese (optional)

Chop the tomatoes into 1 inch sized pieces. Retain the juices and seeds.

Skewer the pepper and roast it directly on the gas for about 10 minutes turning it around at regular intervals. The skin will blacken. Or roast it in an oven. Peel off the skin and chop roughly.  Add to the tomatoes.

Sprinkle the mint leaves, salt and pepper on. Shake well to get all the juices and spices going.

Add dollops of the cream cheese. Refrigerate for at least 15 minutes.

    Looks and sounds amazing! BTW, where do you buy the feta cheese? I looked all over in Spar and didn’t find it!

    Manju, I’ve always found bottled or fresh cheese at the cheese counter in the Bannerghatta Road Spar. Where did you try?

    At the Koramangala Spar (Oasis). They had lots of exotic cheeses but no feta cheese. Or is it called by another name at Spar? :-)

    Nu, me too find it very difficult to find feta cheese. Always take a peek into the cooler of every dept store I visit. Naamdharis, Thoms,…Always disappointed.

    Ayesh, Spar almost always has feta, dear. Check them out. I have nearly a continuous supply these days! If not, Food Hall will have now, for sure.
