Chocolate brownie, cake, crisp-top

It’s hard to put a name on this. Because with Aarohi Singh, a brownie isn’t just a brownie. Just like her art which is funny, has multiple personalities and gives you a sum total of a wonderful feeling. (STB had featured her art here).

Here is Aarohi’s very healthy version of a chocolate brownie/cake. She believes in eating and cooking healthy for her family and her recipes substitute atta (wheat flour) for maida (all purpose flour).

And this is making a whole lotta sense these days as we discover the benefits of eating healthy. So yes, I’ll be considering wheat from here on in bakes. She talks about the basic brownie recipe first and then suggests all the amazing variations you can try with it, including using lauki.

The basic brownie recipe:

  • 1 cup unsalted butter
  • 3 whole eggs
  • 1 1/4-1/2 cup sugar
  • 1/4 teaspoon of salt
  • 3 heaped tablespoons of cocoa
  • 1 teaspoon vanilla ess or instant coffee powder
  • 1 1/4 cup maida
  • 1 cup of chopped walnuts
  • I generous splosh of rum :-) ( if you want)
Just bung the whole lot to together and beat with a spoon or electric whisk. Scoop out into a flat brownie pan about 9×12″ for about 35-40 mins in a 275 deg oven. It’s done.
  • Now, I tweak this by always substituing atta with maida. By adding one more egg and adding a teaspoon of baking powder…it turns into great choc cake.

  • I also sometimes add a total one cup of wheat and oat bran ( 50-50) into the mix . But then I add a cup of dahi or cold milk to the cake variation.
  • Adding thick choc chunks makes it a double rich choc cake.
  • Or hold the cocoa and… I sometimes adda 1/4 cup pf roasted sooji to give it a really crisp top.
  • To the same basic mix i cup of carrots or lauki can also be added.
  • Add the juice of one nimboo and its zest.
  • Or add a cup full of oats.

non chocolate

  • For all the tweaked versions you would need 4 eggs and the baking powder.

    Sad story of my life….have not had a weekend to myself at home in years….this is a working one…and the next one is …ON THE ROAD!!!!!! It’ll be a while before the batter scatters for me, once more :)

    @ Rekha- there is a healthier option to the butter- apple sauce. I stew them and then mash up. For substitution use half the butter required but double the apple sauce. I have also used jaggery instead of sugar. Also tried honey… result was not too good :-)( my darling husband ate it anyway.
    But I have to say, I have kinda figured out the consistency the batter needs to be with constant trial and error…you would have to do the same.

    I just tried out the variation with oats and wheat – TOTALLY rocking – the whole batch disappeared in one evening. My 3 year old was climbing the table trying to get more after the 1st 2 pieces!
