Eggless apple cake

Here’s another eggless cake recipe from my sis-in-law, Mili. With so many out there turning vegan for a healthy lifestyle eggless recipes are on the increase! I’m reading about eggless quiches and more right now. Bring you those soon!

You need:

  • Maida (all purpose flour)- 2 cups
  • Brown Sugar – 1/2 cup
  • Caster sugar – 1/2 cup (If you like your cake very sweet, use 1 cup)
  • 3/4 cup melted butter
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 cup walnuts, chopped (optional)
  • 2 cups grated apples
  • 1 teaspoon vanilla essence
  • 1/4 cup cooca powder (optional. if you like a slightly bitter, choclatey taste, add this)
  • 1 teaspoon cinnamon powder

To make the cake:

  1. Preheat an oven to 200 deg C.
  2. Whisk the butter and both sugars until the mixture is light and fluffy.
  3. Add the grated apples and mix well.
  4. Add the baking soda and baking powder. Then start adding flour slowly add milkĀ if required while whisking.
  5. Add the vanilla essence, cinnamon powder, cocoa powder (if using) and whisk.
  6. Mix in the chopped walnuts gently, if using.
  7. Pour the cake batter into a 9 inch diameter greased tin and bake for about 25-30 minutes OR until a skewer inserted comes out clean.

    Why does the title say apple cake when the recipe has only carrots? What am I missing?

    You didn’t miss anything. That was supposed to be grated apples, not carrots! My bad, this is what comes out of being in a hurry to post a recipe!
