Potatoes in coriander side dish

Love the size and and ‘manageability’, if I can call it that, of baby potatoes! This one is from Haima (Tuku), my sister-in-law. She made this on my last visit to her place and I loved it!  A simple, yet different, taste of coriander. Goes well with rotis (Indian breads).

Prep time: 20 minutes

Cooking time: 20 minutes

Serves: 4

You need:

  • 20-25 baby potatoes (3/4 kilo), nicely scrubbed and washed
  • 2 teaspoons ginger paste
  • 2 teaspoons garlic paste
  • 1/2 a bunch – about 20-25 stalks of coriander washed and destalked. remove the large stalks, leave the tender ones in.
  • 2 long green chillies, chopped
  • Puree of 2 medium tomatoes
  • Paste of 2 medium onion (skin, chop and blend the onions in a blender)
  • 2 teaspoons jeera (cumin) seeds
  • Salt to taste
  • 1 tablespoon cooking oil

To make it:

  1. Cook the baby potatoes in a pressure cooker for 10 minutes or in an open pan (this may take 20-25 minutes). Peel the skin off the boiled potatoes and keep aside.
  2. With a little water, blend the coriander leaves and green chillies to make a slightly coarse paste. Keep aside.
  3. In a pan heat the oil. Pu tin the jeers (cumin) seeds and let them sputter.
  4. Put in the onion, ginger and garlic paste, saute for 2-3 minutes.
  5. Add the tomato puree, saute for another 5 minutes.
  6. Add the coriander-chilli paste and saute for another 2 minutes.
  7. Now add the cooked potatoes and salt. Mix well.
  8. Add a 1/4 cup of water, place a lid on the pan and allow the potatoes to absorb the flavours – 5 minutes.
  9. Garnish with freshly chopped coriander leaves and serve hot!
