Luscious lemon curd and chocolate yogurt pies!

“It’s official. The pie bug has bitten. And hard. I’m not at all sad there isn’t a cure :). Who’d want to stay away from these luscious lovelies?! Harini (I shall have to call her Martha now) shares two most delicious no-bake-fill pies. Read on to see what that is!” – Anu

Lemon ‘curd’ pie

For the pie crust: Follow the basic pie crust recipe here.

For the filling you need:

  • Juice and zest of 6 limes
  • 6 eggs
  • 25 grams of unsalted butter
  • Sugar to sweeten
  • A teaspoon of vanilla essence (optional, if you like the lime flavor strong, omit this)

To make the filling:

  • Beat all the ingredients in a glass bowl lightly.
  • Bring a pan of water to boil on the stove. Place the glass bowl with the ingredients in the pan of water.
  • Keep whisking with a spatula, until the mixture is thick and coats the spatula.
  • It can be bottled and stored in the fridge for up to two weeks. Try a wallop of this over toast too! Tastes great!
To make the pie:
  • If you have followed the basic pie crust recipe from the blueberry pie recipe – make sure you bake the pie crust for at least 10-15 minutes so that the crust is fully baked. This is because you won’t be baking it again with the filling.
  • You can make one 8 inch pie or two or three smaller ones, in smaller pie dishes. Just divide up the pie mixture accordingly.
  • You will not need any extra dough to cover the top of the pie.
  • Once you have the pie crust ready, spoon the lemon curd filling into the pie dish.
  • Dot with butterscotch / caramel pieces.
  • Chill in the refrigerator for a minimum of an hour.
  • Remove and serve cold.

For the pie crust: Follow the basic pie crust recipe here.

For the filling you need:

  • 1 cup cocoa powder
  • 1 cup fresh cream
  • 1 cup yogurt (curd) preferably made with skimmed milk and whey removed
  • Caster (powdered) sugar to sweeten

To make the filling:

Blend together all ingredients in a bowl and whisk until you get a smooth, thick mixture.

To make the pie:

  • Follow the same method mentioned in the lemon curd pie recipe.
  • Once you have spooned in the filling, dot with chocolate chips and refrigerate.
  • Serve cold.
