Red and yellow peppers curry

red and yellow peppers curryIt doesn’t have to be continental all the way with red and yellow peppers. They make a great side dish for rotis/phulkas. All this curry needs is some Indian spice! The peppers are sweet and the spice is well…spicy, so they work really well together.  It’s so simple and hardly takes any time to make.

Prep time:

10 minutes for chopping
15 minutes for cooking

Serves: 4

  • 2 medium yellow peppers, diced
  • 2 medium red peppers, diced
  • 2 teaspoons rasam powder (this is available in any supermarket)
  • Salt to taste
  • A few sprigs of coriander leaves, chopped
  • A few curry leaves
  • A spoon of oil

How to make it:

  1. In a shallow pan, saute the diced peppers in a spoon of oil over low heat. About 10 minutes. Don’t let them get too soft, slightly crunchy is good.
  2. When the peppers are done, add the rasam powder. This has jeera and dhania (cumin and coriander) so you don’t have to add any of those.
  3. Add the salt. Stir for a couple of minutes.
  4. Sprinkle the coriander and curry leaves on top and stir for a minute.

Serve hot with phulkas!

ezbz, it is a bit watery, and tends to settle at the bottom of the bowl. It’s not a heavy curry.

I’m crazy about peppers this sounds so good. Think I’ll roast the peppers and try the rest out will keep you posted. Going to have to slot days for the 5 – 6 items I have my eye (or is it tongue?) on.

Note to self: Do not surf food blogs at 5:30 pm when my stomach is screaming feed me you nut job, my feet refuses to haul my behind to the cafeteria and my head insists I’m not quite done at work to call it a day yet. Maybe if I got off this blog I can get something done :)))
