The simplest pasta sauce

My kids love pasta with the most basic of tomato sauces. They’re a long way from loving to eat it with the usual veggies that accompany the sauce, and I’m happy to make it that way for them!

For two servings:

Just grate 4 medium tomatoes. Most of the skin will remain in your hand as you grate, this is fine. Heat a tablespoon of olive oil in a pan. Throw in 2-3 pods of garlic, chopped. After a minute, add the grated tomatoes and reduce to a slightly thick sauce over medium heat. Add salt and pepper to taste. I store fresh rosemary in a pack in the fridge. Even if it dries, it stays, and when you add it to a hot sauce and leave it covered for two minutes…you get all the aroma you need. Just 2-3 basil leaves will also do fine!

Boil the pasta according to the instructions on the package and just toss together the pasta and sauce. If you like cheese, grate some parmesan cheese over the pasta. So simple and so delicious!

    Teds, the beauty of it is you can make any number of variations by just adding veggies (mushrooms, peppers, zucchini), cheese, or meat (shredded chicken, meatballs) of your choice. :).

    Chatura, fresh tomatoes, of a saucy consistency, will last up to a week in the fridge, if simmered for 20 minutes or so in olive oil. But not longer than that. Adding any preservatives, like in the bottled sauces, will make the sauce last longer, but will give it a synthetic taste which isn’t my fave taste.
