Shepherd’s pie (Veg version!)

This one’s from my sil Mili! She makes the veg version and this is her recipe. Traditionally Shepherd’s Pie is made with lamb. For this version see here.

Prep time:

  • Vegetables: 40 minutes
  • Baking: 10-15 minutes approximately.

Serves: 4

Ingredients:
  • 2 large potatoes
  • 1 largeĀ onion
  • 2 medium carrots
  • Some cauliflower florets
  • 250 grams beans
  • 250 grams peas
  • Add any other vegetable that you like
  • Oil to saute
  • Salt to taste
  • 2 teaspoons garam masala
  • 1 teaspoon ginger-garlic paste
Step 1
Pressure cook 2 large potatoes, remove the skin, mash it well and add salt, mix and keep aside.
Step 2
  1. Chop onion, carrots, beans into bite sized pieces.
  2. In a pan pour a tablespoon of oil, heat it.
  3. Add the onions, some ginger-garlic paste and fry.
  4. Add all other veggies and stir fry them for a while.
  5. Add salt to taste, mix and cover it and let it cook in its own steam.
  6. Keep stirring in between. Take off the heat when the veggies are semi-cooked.
  7. Add garam masala and mix it well and cover it and remove from stove.
Step 3
  1. In an oven safe bowl spread the vegetables evenly.
  2. Spread the mashed potatoes evenly over the vegetable mix.
  3. The veggies should be covered well with the mashed potatoes.
  4. Preheat oven to 170-180 degrees C and bake the vegetables for about 10-20 mins or till the mashed potatoes are golden brown in colour.
Serve with chapatis, rotis.
