Kitchenista’s Crab Curry

What you need:

– 2  Bay leaves
– 3  Whole green Cardamom
– 1 and 1/2 inch stick of Cinnamon
– 1/2 teaspoon Mustard
– 1/2 teaspoon Cumin seeds
– 1/2 cup Vegetable oil
– 2 medium Onions chopped
– 3 tablespoons dessicated Coconut
– 1/2 a tablespoon Red Chilli Pepper Flakes
– 12 – 15 curry leaves (loose the stem)
– 1 and 1/2 teaspoon of Garam Masala
– 1/2 teaspoon of Cumin Powder
– 1 and 1/2 a half teaspoon of Cayenne Pepper
– 1 teaspoon of Coriander Powder
– 1 teaspoon of Ginger Paste
– 1 teaspoon of Garlic Paste
– 1 and 1/2 teaspoons of salt
– 3/4 can of tomato sauce
– 4 tablespoons of coconut milk
– 1 teaspoon of tamarind paste concentrate
– 2 pounds of crab – whatever kind you like, I use snow crab which is available locally
– Chopped cilantro for garnish and flavor

How to make it:
1. Heat oil on medium low
2. Add bay leaves, cardamom, cinnamon let it splutter – 1 minute
3. add mustard and cumin seeds until it sputters – 2 minutes
4. Add onions and fry until light brown
5. add pepper flakes, dessicated coconut, curry leaves and fry till coconut is slightly brown.
6. Add garam masala, cumin powder fry – 3 minutes
7. Add cayenne pepper and coriander powder and fry – 4 minutes.
8. Add ginger paste, garlic paste followed by salt, ensure it does not brown or burn but is cooked – about 5 minutes.
9. Add tomato sauce and fry till tomato is cooked and the color darkens – about 5 minutes. Keep stirring to ensure it doesn’t burn.
10. Add tamarind paste and continue to fry until oil just about starts to separate.
11. Add coconut milk and continue to stir to ensure it does not burn – about 5 minutes.
12. Add about 4 cups of water and let it simmer for about 15 minutes. Keep an eye and stir occasionally to avoid burning.
13. Steam crab separately for about 4 minutes.
14. Cover the curry and lower the heat for about 20 minutes. Stir at intervals to ensure it does not burn.
15. When the oil has separated add crab and ensure it is nicely covered in the curry.
16. Add half the chopped cilantro, cover and let the crab curry sit for at least 40 minutes before topping with rest of the cilantro and serving with rice or your favorite flat bread.
