Fried capsicum/potatoes

The first reader’s recipe is in! And it’s fun! Dipti Mathur sends this in from the UK.

I loveĀ this simple quick recipe as it does not require me to cut any onions orĀ ginger. Additionally, I love the tangy flavour.

Ingredients:

  • Capsicum (2)
  • Potato (1 large)
  • Cumin Seeds
  • Lemon Juice(2 teaspoons)
  • Salt
  • A spoon of oil (vegetable, peanut)
  • Red mirchi (chilli) powder

Method:

  • Slice the capsicum and potato into small cubes.
  • Put the oil in a frying pan.
  • When the oil is hot, put cumin seeds.
  • When cumin seeds begin to crackle, put capsicum and potato cubes.
  • Put salt and mirchi powder according to taste.
  • Put the gas on slow and cover it, while occasionally stirring it.
  • When the capsicum and potato cubes are tender, pour enough lemon juice over it until you get your ‘tangy’ taste.
  • Garnish with coriander and serve hot.
