Instant chocolate mousse

I saw the correct version of this recipe on Nigella Lawson’s TV show. Like most of her recipes, it was lip-smacking. But getting hold of double cream in large quantities is not an Indian shopper’s forte. I tried it with regular cream instead, and a few variations, and it came out just fine. It’s an eggless, no-fuss mousse. The springy texture comes from the marshmallows!

Small warning: this is not for the calorie conscious.

What you need:

  • 200 grams (1 small tetra pack) Amul fresh cream
  • 200 grams small chocolate chips (these are available in Nilgiri’s department stores. Look in the confectionary/ baking section) OR half a bar of cooking / dark chocolate also available in Nilgiri’s
  • 2 small packs marshmallow sweets, about 8-10 pieces (look for these in the chocolate section in any supermarket, or try in Sweet Chariot stores)
  • 100 grams cooking butter (unsalted)
  • 1 teaspoon vanilla essence
  • You don’t need sugar. The sweetness in the choc / marshmallows is good enough

How to make it:

  • Melt the butter, marshmallows, and chocolate chips in a thick bottomed pan. Use a non-stick pan for a quick meltdown.
  • Once melted, take the pan off the heat and let the mixture cool completely.
  • In another bowl, whip the cream and vanilla essence with a whisk/electric beater until it is thick.
  • Pour the cooled chocolate mixture into the cream and continue whisking till everything is combined.
  • The mixture will not be very thick (unlike Nigella’s).
  • So spoon the mousse in to dessert cups directly or leave it in the bowl and refrigerate. In half an hour the mousse will set and be ready to go!

  • Use unconventional servers for the mousse. Try shot glasses for small portions. Martini or margarita glasses, even champagne saucers look spectacular!
  • Add funky garnish to make them look like a million bucks.
  • Kids will love gems/m&ms or colored sprinkles.
  • Dark or white chocolate chips, chocolate shavings, a truffle, nicely cut strawberries…the mousse is yours!
